jump to expanded postwait you can turn maple syrup into a caramel ice cream topping by just microwaving it briefly. omg
(be careful of course; sugar burns easily and can burn you easily too, and even when it works well it's a devil to clean)
@hikari That's essentially how you make sugar on snow (a popular treat when I was growing up in NH).
If you boil syrup down to about 5 or 7 degrees above boiling (it's been a while so I'm rusty), then remove it from heat and whip vigorously for a few minutes, it'll suddenly turn the color of coffee and make maple candy. I used to do with with some of the syrup I made. It's delicious! 😀
