there are few things that can't be improved by tomatoes, or garlic, or olive oil, so there's no way this can come out bad, right…?

Somehow, the circumstances and method of cooking used in this case have produced exactly the sort of result you would expect from an air fryer, although we have never had or used one. No, we don't have a convection oven either. But it did cook for >1h at a gentle 175°…
